Nate Jacobs' Crab Cakes

The first request for Nate’s Crab Cake recipe came in only a few days after the release of Out of Time.

The recipe is real, as are all the recipes that make appearances in my book. I can confirm that Nate’s crab cakes are very good - because I based the description on my husband Mike’s crab cakes.

It’s always a special occasion when he makes them for me… even if it’s just because it’s Tuesday.

Although I’ve got a pretty good idea of how he makes them, he’s been able to keep the exact recipe a secret from me for the past sixteen years. On the days he plans to make them, he sneaks into the kitchen and does his mise-en-place when I’m distracted doing something else. Even if I’m in the kitchen “helping”, he is evasive. He might let me sprinkle in the panko breadcrumbs while he’s mixing everything together, but when I ask for details like how much red pepper he put in or what he put in the tartar sauce…he is maddeningly vague.

Perhaps if enough of you “fans” ask … he’ll guest blog and give us all the secret recipe!
